Lasagna is a beloved dish in Iran and many other countries. Interestingly, it originates from Italy, a country known for its amazing cuisine, from pizzas and pastas to the popular bruschetta dessert. Today, we will introduce you to a different recipe for this delightful dish. Chicken lasagna, with its incredibly tasty ingredients, is an excellent choice for a warm and hearty dinner. The good news is you won't need béchamel sauce for this recipe, and you'll learn a unique method for preparing the lasagna layers. 16 lasagna sheets
2 cups of cooked and shredded chicken
1 tablespoon of hot sauce
2 tablespoons of tomato sauce
2 cups of grated pizza cheese
2 cups of chopped mushrooms
1 teaspoon of thyme
1 chopped onion
Sliced onion for garnish
Chopped cilantro or parsley for garnish
Oil for frying
Prepare the Filling: Heat some oil in a pan and sauté the chopped onion until golden. Add the cooked, shredded chicken and sauté for a bit. Add the chopped mushrooms, tomato sauce, thyme, and 1 tablespoon of hot sauce to the pan and sauté briefly. Add some salt and remove the pan from the heat.
Cook the Lasagna Sheets: Fill 2/3 of a large pot with water and bring it to a boil. Add some salt and oil. One by one, place the lasagna sheets in the boiling water until they soften, about a few minutes. Remove the sheets from the water and place them in a colander. Rinse with lukewarm water and spread them on a clean cloth to dry.
Assemble the Lasagna: Preheat the oven to 185°C (350°F). Grease a baking dish with some oil and spread a little ketchup on the bottom. Cover the bottom with 4 lasagna sheets, add some of the chicken filling and grated cheese. Continue layering with another lasagna sheet, filling, and cheese until you have 4 layers. Top the final layer with some sauce and grated cheese.
Bake the Lasagna: Place the baking dish in the preheated oven for 10 to 15 minutes until the cheese melts. Garnish the prepared lasagna with sliced onion and chopped cilantro or parsley.
You can add other vegetables like peas and corn as desired.
Let the lasagna cool slightly before cutting to prevent the layers from falling apart.
Adding tomato paste is optional.
