Black Grape Cake

Ingredients for Black Grape Cake in a Toaster

  • Flour (plus 2 tbsp): 1½ cups

  • Eggs: 3

  • Baking powder: 1 tbsp

  • Vanilla: 1 tsp

  • Cornstarch: 1 heaping tbsp

  • Milk: ½ cup

  • Oil: ⅓ cup

  • Yogurt: 3 tbsp

  • Sugar: 1 scant cup

Instructions

  1. Mix Eggs and Sugar
Crack the eggs one at a time into a bowl and whisk them. Add the vanilla and whisk for 20 seconds. Gradually add the sugar, whisking continuously until the mixture becomes creamy and elastic.

  2. Incorporate Liquids
Add the milk and yogurt to the mixture, stirring gently. Turn off the mixer and add the oil, blending it in using the mixer blades.

  3. Combine Dry Ingredients
Sift together the flour, baking powder, and cornstarch three times to aerate. Gradually add the dry ingredients to the wet mixture, folding gently with a mixer turned off. Use a spatula to mix in a circular motion carefully, preserving the bubbles that help the cake rise.

  4. Prepare the Mold
Line the bottom of your mold with parchment paper. Pour a portion of the batter into the mold. Add some grapes, gently pressing them into the batter with a spatula. Repeat the process, layering batter and grapes until the ingredients are used up.

  5. Top and Bake
Scatter some grapes on top of the batter. Place the mold in the oven at 180°C (350°F) for 35 minutes. For a toaster oven, set the temperature to 160°C (320°F):

    • Lower element: Bake for 25 minutes.

    • Both elements (upper and lower): Bake for an additional 20 minutes.
Check the cake’s doneness; if it’s not ready, bake for another 10 minutes with only the lower element on.

Note: Baking times may vary between ovens and toaster ovens, so ensure to monitor the cake closely.
