According to Saednews' culinary service, kuku is one of the famous Iranian dishes, made in various types, and every Iranian housewife knows how to prepare several versions of it. The main ingredient in all kuku recipes is eggs, which are combined with various vegetables like onions, garlic, potatoes, mushrooms, special kuku herbs, and more. The resulting mixture is often fried in oil. Kuku can be fried in different shapes; either the mixture is spread evenly across the bottom of the pan and sliced after cooking, or it is shaped into smaller circles from the start and fried in oil.

One of these types of kuku that you will learn to prepare next is broccoli kuku. For this dish, we use broccoli. To start, wash the broccoli florets thoroughly with water or water and vinegar to remove any dirt. Let any excess water drain. Place the broccoli in a food processor and chop it several times until it becomes small particles, about the size of rice grains.

Put the chopped broccoli in a suitable bowl, then add the remaining ingredients for the kuku: eggs, grated mozzarella cheese, grated or minced onion, crushed garlic, salt, black pepper powder, dried oregano, and if necessary, flour. Mix all the ingredients together until the kuku mixture is smooth.

Pour oil into a pan and heat it over medium heat. Then, using a spoon, scoop out some of the kuku mixture and fry it in the oil in a circular shape.

With this amount of ingredients, you can make 6 pieces of kuku, which is suitable for a two-person dinner. If you want to make more, simply increase the amounts of the ingredients accordingly.

To chop the broccoli, you definitely need a food processor. It is only possible to chop the broccoli into rice-sized pieces with the help of a food processor.

You can use garlic powder and onion powder for making the broccoli kuku, but it is recommended to use fresh garlic and onions for a tastier dish.

To enhance the aroma and flavor of the kuku, be sure to add a small amount of dried oregano.

For better taste, we use mozzarella cheese in this recipe, which should be grated.

Step 1 of preparing broccoli kuku:

Wash 1 small broccoli (around 200 grams) thoroughly with water and separate the florets. After washing, place them in a colander to drain the excess water.

Place the broccoli florets in a food processor and pulse a few times until finely chopped and turned into rice-sized pieces.

Step 2 of preparing broccoli kuku:

Place the finely chopped broccoli in a large bowl, break in 1 large egg, and add 3 tablespoons of minced onion, 2 cloves of minced garlic, half a cup of grated mozzarella cheese, 1 teaspoon of salt, half a teaspoon of black pepper powder, 1 teaspoon of dried oregano powder, and 2 tablespoons of white flour. Mix everything well together.

Step 3 of preparing broccoli kuku:

Add 4 tablespoons of frying oil to the pan and place it over medium heat to warm up. Scoop the broccoli mixture and shape it into a circle, then fry it in the oil until both sides turn golden.

Repeat this process until all the kuku mixture is used up.

Arrange the kuku on a plate and serve with your favorite sauce.
