Cocoa Cake | How to Make an Easy Chocolate Cake with Cocoa Powder and Milk

Cocoa cake is one of the most popular cakes worldwide. Its preparation is very easy, allowing you to make it at home and enjoy its exceptional taste. This simple cocoa cake can be served for breakfast or as an afternoon treat. Here’s a step-by-step recipe from Namnak Kitchen.

Ingredients

  • Flour: 2.5 cups

  • Eggs: 3

  • Cocoa powder: 3 tablespoons

  • Sugar: 225 g

  • Baking powder: 1 tablespoon

  • Vanilla: ½ teaspoon

  • Butter: 135 g

  • Cold water: 1 cup

  • Salt: a pinch

Steps to Make Simple Cocoa Cake

Step 1: Bring all ingredients to room temperature. This improves the cake’s texture and helps the ingredients mix better.

Step 2: Separate egg yolks and whites.

Step 3: In a large bowl, beat the butter and sugar with an electric mixer until pale and creamy.

Step 4: Add the egg yolks to the butter-sugar mixture and mix well.

Step 5: Sift the flour, cocoa powder, baking powder, and vanilla together in a separate bowl for proper aeration.

Step 6: Gradually add cold water to the dry ingredients and mix until smooth.

Step 7: Combine the flour mixture with the egg and butter mixture, stirring gently until just mixed.

Step 8: Clean and dry the mixer. Beat the egg whites until stiff peaks form.

Step 9: Fold the beaten egg whites into the batter gently in a circular motion.

Step 10: Preheat the oven to 170°C (340°F) for 15 minutes. Grease the cake pan and pour in the batter. Bake for 40 minutes.

Final Step: Test with a toothpick or fork—if it comes out clean, remove the cake and let it cool. Once slightly cooled, transfer to a wire rack to cool completely.

Optional Cocoa Ganache

For a moist cocoa cake, you can prepare ganache. Heat 120 ml milk and 100 g butter over low heat until butter melts, avoiding boiling. Chop 500 g chocolate and place in a large bowl. Pour the milk-butter mixture over the chocolate and stir until melted. Chill for 24 hours; pour over the cake and decorate with chocolate chips.

Tips for Perfect Cocoa Cake

  • Melted chocolate, pistachio powder, or coconut can be used for decoration.

  • Slice the cooled cake into 2–3 layers for filling with cream or powdered sugar.

  • Sift cocoa powder multiple times to prevent lumps.

  • Adding a little vinegar activates the baking powder for better rise.

  • Use the correct pan to avoid sticking or uneven rising.

  • Test doneness with a toothpick to ensure the center is fully baked.
