Ingredients for Chicken and Scallion Kuku (Serves 4)

To make this delicious vegetable-infused chicken kuku, you’ll need:

  • Chicken breast: 1 piece (about 400 g)

  • Scallions: 1 medium bunch (about 150 g)

  • Eggs: 4–5

  • Onion: 1 medium

  • Garlic: 2 cloves

  • Concentrated brewed saffron: 2 tbsp

  • White flour or breadcrumbs: 1 tbsp (optional, for better consistency)

  • Salt, black pepper, turmeric: as needed

  • Vegetable oil for frying: as needed


How to Make Chicken and Scallion Kuku

Step 1: Prepare the Chicken

Place the chicken breast in a suitable pot with onion, garlic, a pinch of turmeric, and some water. Cook over medium heat until fully done. Once cooked, let the chicken cool slightly, then shred it thoroughly with a fork or pulse it in a food processor until finely textured. Be careful not to over-process, as the chicken should retain some texture in the kuku.

Step 2: Prepare the Vegetables
