Red chili powder: 1/2 tablespoon
Black pepper powder: 1/2 tablespoon
Coriander seeds: 5 tablespoons
Green cardamom: 3 pods (2 if large and seed-filled)
Ground cumin: 2 tablespoons
Turmeric: 2.5 tablespoons
Sea salt: 1/2 teaspoon
Table salt: 1 tablespoon
Onion powder: 1.5 tablespoons
Garlic powder: 1 tablespoon
Cinnamon: 1.5 tablespoons
Ginger: 1 tablespoon

Heat a pan over low heat. Add the coriander seeds and dry roast them for about 1 minute. The heat should be low, and you should stir every 10 seconds to prevent burning.
Then add the cardamom pods and roast for another 30 seconds. Grind the coriander and cardamom together.
Heat the pan again on low heat. Add the ground coriander and cardamom back into the pan. Then add all the other spices and gently warm them together over low heat.
