How to Prepare Chicken Seasoning

Heat a pan over low heat. Add the coriander seeds and dry roast them for about 1 minute. The heat should be low, and you should stir every 10 seconds to prevent burning.

Then add the cardamom pods and roast for another 30 seconds. Grind the coriander and cardamom together.

Heat the pan again on low heat. Add the ground coriander and cardamom back into the pan. Then add all the other spices and gently warm them together over low heat.

Turn off the heat—there is no need to roast the spices further. Just warming and mixing them is enough.

Your spice blend is ready. Store it in an airtight container. If you prefer a very fine powder, you can also pulse it a few more times in a grinder at this stage.
