How to Make Delicious Three-Tomato Soup

Ingredients for Three Tomato Soup

  • Dried tomatoes: ¾ cup

  • Canned tomatoes: 1 can (800 g)

  • Large onion (chopped): 1

  • Low-salt tomato paste: 85 g

  • Low-salt chicken broth: 400 g

  • Butter or olive oil: 1 tablespoon

  • Fresh coriander (chopped): 2 tablespoons

  • Fresh celery (chopped): ½ cup

  • Lemon juice: 2–3 teaspoons

  • Fresh cream and parsley: for garnish


Instructions

  1. In a suitable pot, sauté the chopped onion in a little butter or olive oil for about 10 minutes until it turns golden.

  2. Add half of the dried tomatoes, chicken broth, tomato paste, celery, and canned tomatoes to the pot. Bring the mixture to a boil.

  3. Once boiling, reduce the heat and let it simmer gently for about 20 minutes.

  4. Meanwhile, soak the remaining dried tomatoes with a little water and heat them in the microwave for about 1 minute, then chop them finely.

  5. Transfer the cooked tomato mixture along with the chopped dried tomatoes into a food processor and blend until completely smooth and creamy.

  6. Return the blended soup to the pot and add lemon juice.

  7. Serve hot, garnished with fresh cream and chopped parsley.
