According to the Saed News Agency, cake is a type of pastry with European origins. Although archaeologists believe that this food has existed since ancient times, the modern concept of cake—characterized by sweetness, lightness, and a spongy texture—is a form of dessert that emerged in the mid-18th century. Flour, sugar, eggs, and butter are the four most commonly used ingredients in cake preparation.
In general, cakes are divided into two major groups: non-fat or sponge cakes, and fat-based or butter cakes. The difference between butter cakes and sponge cakes is that, unlike sponge cakes, the air bubbles in butter cakes are not created by incorporating air through beating sugar and eggs. Instead, the main factor in forming bubbles in these cakes is the production of gas within the batter, caused by using a leavening agent such as baking powder.
