Although in some towns "Yakh Dar Behesht" refers to a type of sweet made with starch, it is actually the name of a very cool and refreshing drink enjoyed during the hot summer season, which can be made with various kinds of fruits and enjoyed.

Ingredients for Lemon and Strawberry Yakh Dar Behesht:
3 and 2/3 cups of water (separate)
Juice of 3 lemons
Granulated sugar, 1/2 cup + 1 tablespoon (separate)
500 grams (half a kilo) of strawberries
How to prepare Lemon and Strawberry Yakh Dar Behesht:
One day before serving Yakh Dar Behesht, puree the strawberries and 1 tablespoon of sugar in a blender. Place the mixture in an airtight container and refrigerate overnight to chill.
The next day, prepare the lemonade. Pour fresh lemon juice into a pitcher. In a small saucepan, combine 2/3 cup granulated sugar and 2/3 cup water over medium heat, stirring until syrup forms. Continue stirring for about 5 minutes until all the sugar dissolves. Pour the syrup into the lemon juice pitcher. Add 3 cups of cold water and stir well.
Blend 3/4 cup of the lemonade with 3/4 cup of ice until smooth.
Spoon the Yakh Dar Behesht into a glass, then slowly drizzle 1/4 cup of the strawberry puree on top.
