Baghali Polo is highly nutritious due to the ingredients it contains, such as rice, fava beans, dill, and saffron. Rice is a source of carbohydrates, vitamins B1 and B2, fava beans are rich in fiber, vitamin C, vitamin K, iron, and magnesium, and dill is a source of vitamin A, vitamin C, potassium, and manganese. Saffron contains powerful antioxidants and vitamin B2. These qualities make Baghali Polo an excellent dish for boosting the immune system, improving digestive function, and promoting bone health.

Ingredients for making Baghali Polo with chicken for special occasions:

  • Note: For better steaming of the rice, first increase the heat for 2 minutes so that both the rice steams up and the crust forms. Then, be sure to set the heat to low for an hour without opening the lid to let it cook perfectly.

  • 4 cups rice

  • 2 large onions

  • 2 pieces of whole chicken thighs

A Few Tips:

  • The ratio of fava beans to rice: For every 4 cups of rice, use 2 cups of fava beans.

  • If the fava beans are too cooked, they will become mushy. Be sure to slightly undercook your rice compared to plain pilaf, so that in the end, the rice is fluffy and separate.
