Rice – 3 cups
Fava beans – 1 cup
Dill (chopped) – 1 cup
Salt – to taste
Ghee (clarified butter) – as needed
Brewed saffron – as needed
Turmeric – as needed
Step 1:
To prepare dampokht dill and fava beans in the northern Iranian style, first pour the rice into a suitable bowl with some water and salt. Let it soak for about one hour. Meanwhile, fill a pot halfway with water.
Step 2:
Place the pot over high heat until the water boils. Then add the fava beans and let them cook in boiling water for 15 minutes. After that, drain them in a colander.
Step 3:
Now place a suitable pot over the heat and add some ghee or liquid oil. Add the dill and sauté it well until the raw smell is gone and its color changes slightly.
Step 4:
Next, add turmeric and sauté it with the dill. Then add the fava beans and sauté them for a few minutes until lightly fried. Drain the soaked rice in a colander to remove excess water.
Step 5:
Add the rice to the pot and stir to combine with the other ingredients. Then add enough water to just cover the surface of the rice. Add the brewed saffron and one teaspoon of salt.
Step 6:
Let the water absorb and the rice partially cook. Then place a steam damper cloth (or kitchen towel) on the lid, cover the pot, and let the rice steam for 45 minutes. Finally, transfer the dill and fava bean dampokht to a serving dish and enjoy.
