According to the Saed News cooking service, fancy fried onions—also called crispy fried onions—are used to garnish various dishes such as ash reshteh (a Persian noodle soup) and kashk-e bademjan (eggplant with whey). To achieve caramelized crispy fried onions, you just need to follow a few simple but important steps during preparation.

After chopping the onions, place them in boiling water for 5 minutes. Then remove them from the boiling water, drain, and let the onions dry. (After drying, the onions should look glassy and translucent.) Once dry, put the onions in a large pan with plenty of oil so that the onions float in the oil.

An important note about the oil is to make sure you use oil specifically meant for frying, because regular cooking oil is absorbed by the onions and makes the fried onions soft.

When the onions turn slightly golden, quickly remove them from the oil. Then place the onions on a wire rack to drain excess oil. After they cool, package them and store them in the freezer.
