Food should be tasty, simple to prepare, and nutritious — isn’t that right? If you agree, don’t hesitate to try this recipe for your next lunch or dinner. Chicken and vegetable stir-fry is flavorful and nutritious. If you’re on a diet, it’s an excellent choice to provide energy and promote healthy eating.
Ingredients:
Chicken broth;
Soy sauce;
Honey;
Sesame oil;
Cornstarch;
Several pieces of chicken thigh or breast;
Peas;
Chopped red chili;
Chopped red onion;
Chopped mushrooms;
Chopped carrots;
A little fresh ginger, peeled and finely chopped;
Garlic clove, finely chopped;
Chopped scallions.
Preparation steps:
Cut chicken breast or thighs into thin, long strips. Wash and julienne the vegetables. Heat some olive oil in a large pan or wok, add onions and cook until soft, then add chicken strips and sauté over high heat. Add a pinch of salt and pepper. When chicken changes color, add julienned carrots.
After one minute, add corn, bell pepper, and mushrooms in order. Sauté for a few minutes until the mushroom water evaporates.
Tips:
Do not overcook the stir-fry; vegetables should be tender but not mushy.
Avoid adding too much salt early on because soy sauce is salty and may make the dish too salty.
Finally, add soy sauce, honey (or brown sugar), grated garlic, and black pepper; sauté a bit more. Taste the chicken and vegetables and add salt if needed. Transfer to a serving dish, sprinkle sesame seeds, and serve.
You can also add other vegetables like zucchini, cauliflower, Brussels sprouts, cabbage, corn, wheat sprouts, or any vegetables or sprouts you like.
You can substitute veal fillet for chicken fillet or breast in this recipe.
The amount of honey or brown sugar listed balances the flavor but does not make the dish sweet. You can reduce it by half if you prefer.
Suggestion:
You can add a tablespoon of pureed ginger to the stir-fry and sauté with the vegetables.
You can adjust the amount of vegetables according to your preference.

Alfredo Sauce Preparation:
The Alfredo sauce is a mix of cream, milk, Parmesan cheese, butter, garlic, and oil, combined with chicken fillet and mushrooms for great flavor.
Put one tablespoon of butter and one tablespoon of oil in a pan over low heat.
Grate and sauté the onion in the butter and oil until its raw smell disappears.
Add sliced mushrooms to the onion and sauté. To keep mushrooms from turning black, add one tablespoon of lemon juice during cooking.
Add one chopped garlic clove and sauté.
Blend milk and cream separately, then add to the mushrooms.
In another pan, heat the remaining butter and oil, sauté the chopped chicken fillet, add two crushed garlic cloves, salt, and black pepper.
When the chicken is fully cooked, add it to the Alfredo sauce.
Once the mixture starts boiling, add Parmesan cheese and stir.
Add two-thirds cup of cilantro and parsley and stir.
Let the sauce thicken a bit, then turn off the heat.
Fettuccine Pasta Cooking:
Boil water in a pot over high heat.
Add the fettuccine pasta and let it cook until fully soft. Do not cover the pot to prevent the pasta from becoming doughy.
Drain the pasta and add it to the Alfredo sauce.
Let the pasta simmer with the sauce briefly to absorb the flavors.
Your Alfredo fettuccine is ready. When serving, garnish with Parmesan cheese, basil, scallions, cilantro, and parsley.
Additional Tips for Fettuccine Preparation:
For added nutrition, you can add green peas to the pasta.
Adding onion to Alfredo sauce is optional, based on your taste.
Some use lamb loin instead of chicken fillet in this recipe, which also provides a unique flavor.
To keep the sauce from becoming too thick, add less pasta to the sauce.
To prevent pasta from sticking, add a few drops of oil to the boiling water before adding pasta.
Vegans can enjoy this dish by omitting the chicken.
If you’re on a low-calorie diet, omit cream from the Alfredo sauce to reduce calories.
Many people use pizza cheese instead of Parmesan cheese for this pasta.
In many restaurants and events, Alfredo fettuccine is served with meatballs made from ground beef, a good option for red meat lovers.
