3 cups short-grain white rice
1/3 cup sushi vinegar
1/4 cup water
Pour the rice into a large bowl, add cold water, and stir gently by hand. Drain the water and repeat this process two to three more times until the water becomes clear. Place the rice in a strainer for 30 minutes to drain. Meanwhile, prepare the sushi vinegar.
In a suitable pot, combine the rice and water. Cover with a lid and bring it to a boil over medium heat. Then, reduce the heat to low and cover tightly, allowing it to simmer gently for about 12 minutes until the water is absorbed. Remove the pot from heat and let it sit, covered, for another 10 minutes.
Transfer the rice to a large bowl, preferably wooden and never metal. Using a wooden spatula and its sharp edge, gently lift and separate the rice grains. As you do this, gradually drizzle the sushi vinegar over the rice. Be careful not to add too much vinegar to avoid making the rice soggy or sticky.
