Ingredients for Quail Wheat Soup:

  • 1/2 cup peeled wheat

  • 2 medium potatoes

  • 1 large carrot

  • 1 onion

  • 1 quail

  • 1 tablespoon chopped fresh garlic leaves

  • 2 tablespoons peas

  • 2 tomatoes

  • Olive oil (as needed)

Instructions:

  1. Place the quail in a pot and add water to cover it. Chop the onion and add it to the pot. Add turmeric and pepper, then wash the wheat and add it as well. Let it cook on low heat until the wheat blooms.

  2. Test the quail, and once it’s cooked, remove it from the pot, shred the meat, and add it back to the soup.

  3. Dice the carrots and potatoes and add them to the soup, followed by the peas and garlic leaves.

  4. Peel and chop the tomatoes, then add them to the soup. Finally, add a heaping teaspoon of tomato paste.

  5. Add salt (but don’t overdo it since most of the ingredients already contain salt), and let the soup simmer. I also added some olive oil for extra flavor.
