Dried tomatoes: ¾ cup
Canned tomatoes: 1 can (800g)
Large chopped onion: 1
Low-salt tomato paste: 85g
Low-salt chicken broth: 400g
Butter or olive oil: 1 tablespoon
Fresh chopped cilantro: 2 tablespoons
Fresh chopped celery: ½ cup
Lemon juice: 2 to 3 teaspoons
Breakfast cream and fresh parsley: for garnish
In a suitable pot, sauté the chopped onion with a little oil or butter for 10 minutes until it turns golden.
Add half a cup of dried tomatoes, chicken broth, tomato paste, celery, and canned tomatoes to the onions. Wait until the mixture comes to a boil.
