Ingredients for Pistachio Qoraabieh:

  • 90 grams of butter

  • 100 grams of fine sugar (about half a cup)

  • 30 grams of brown sugar (about 2 to 2.5 tablespoons)

  • 1 egg

  • 140 grams of flour (about 1 cup)

  • 5 grams of cornstarch (about 1 teaspoon)

  • 50 grams of pistachio powder (about half a cup)

  • Half a cup of chopped large pistachios

  • 100 grams of milk chocolate

How to Make Pistachio Qoraabieh:

Step 1:
First, place the softened butter (at room temperature) in a bowl, add the white sugar and brown sugar, and mix well until the mixture becomes smooth and well combined. Then, add the egg and continue stirring.

Step 2:
Sift the flour in another bowl to make it light and smooth. Add it to the mixture and stir gently to prevent the flour from clumping. Then, add the cornstarch and mix well. After that, add the pistachios and stir again.

Step 3:
Once all the ingredients are well mixed, knead the dough until it becomes smooth and soft. Then, cover it with plastic wrap and refrigerate for about 20 minutes to let the dough rest.

Step 4:
After this time, remove the dough from the fridge and knead it lightly to release any bubbles inside. Then, take a small amount of dough (about the size of a walnut) and flatten it in your hand. Place two pieces of chocolate inside and fold the dough around it to form a ball.

Step 5:
Grease the baking tray or pan with vegetable oil or butter, or place parchment paper in the pan. Then, arrange the Qoraabieh with some space between them on the tray and place them in the oven, preheated for 10 minutes. Set the oven temperature to 175°C (350°F).

Step 6:
Let the cookies bake for about 11 minutes, then remove the tray from the oven and let them cool at room temperature. Afterward, carefully remove the Qoraabieh from the tray or parchment paper and place them on another dish.

You can decorate the cookies according to your taste with pistachio powder, coconut powder, crushed walnuts, crushed hazelnuts, almond slivers, or sesame seeds. Arrange some pistachio Qoraabieh on a suitable plate, and serve this delicious and soft sweet with tea.
