Saed News: In this video, you will see a female chef from the villages of our country preparing a delicious Mirza Ghasemi with eggplant.
According to the Saed News Cooking Service, Mirza Ghasemi is one of the most delicious and traditional Iranian dishes, especially from northern Iran, which you can prepare easily and in a short amount of time.
Eggplants: 4 large
Tomatoes: 2 medium
Garlic: 4 cloves
Eggs: 2
Vegetable oil: As needed
Salt, pepper, turmeric: As needed
Prepare the Eggplants: Wash the eggplants and roast them on the gas flame or grill until they become soft. Then peel off the skin and mash them with a pestle or chop them finely.
Prepare the Tomatoes: Roast the tomatoes and peel off their skin. Then chop them finely.
Sauté the Garlic: Peel and finely chop the garlic. Heat some oil in a pan and sauté the garlic until golden.
Add the Spices: Add turmeric, salt, and pepper to the garlic and sauté for a bit more.
Add the Eggplants and Tomatoes: Add the chopped eggplants and tomatoes to the pan and mix well.
Add the Eggs: Break the eggs in a separate bowl and whisk them lightly. Then add them to the pan and stir until fully cooked.
Serve Mirza Ghasemi: Serve Mirza Ghasemi in a dish and enjoy with bread or rice.
For better flavor, you can use smoked eggplants.
You can also add some tomato paste to the dish.
If you prefer, you can add some fried onions to the Mirza Ghasemi.
Mirza Ghasemi can be served either hot or cold.
