Ingredients for Grilled Chicken Wings with Potatoes and Special Sauce

This recipe yields approximately 4 to 6 servings of spicy wing sauce and crispy potatoes.

For the Sauce:

  • 200g roasted bell pepper

  • 250g sautéed onion

  • Spicy pepper (optional)

  • 22g garlic

  • ¼ cup vinegar

  • 1 tbsp smoked paprika

  • 1 tbsp oregano

  • 1 tbsp cumin

  • 1 tsp black pepper

  • 1 tsp salt

  • Zest of a whole lemon

  • Bay leaves

  • ½ cup olive oil

For the Chicken & Potatoes:

  • 1 kg chicken wings

  • 1 tsp salt

  • 500g potatoes

🍗Step-by-Step Instructions

Preparing the Spicy Pepper Sauce:

  1. In a blender, combine roasted bell pepper, sautéed onion, spicy pepper (if using), garlic, vinegar, smoked paprika, oregano, cumin, black pepper, salt, and half of the lemon zest. Squeeze half a lemon into the mixture and blend until smooth.

  2. Pour the blended sauce into a saucepan, add a few bay leaves, and cook over medium heat for 30 minutes.

  3. Remove the bay leaves from the pot and take it off the heat. Add ¼ cup vinegar, ½ cup olive oil, the remaining lemon zest, and the juice of the other half of the lemon. Blend with an immersion blender until smooth.

Marinating & Cooking the Chicken Wings:

  1. Season the chicken wings with 1 tsp salt and ¼ cup of the spicy pepper sauce. Let them marinate in the refrigerator for 2 hours.

  2. Heat a pan with a small amount of vegetable oil and sear the wings until crispy and golden brown. Remove from the heat and coat them with another ¼ cup of the sauce.

Roasting the Chicken & Potatoes:

  1. Toss the potatoes in the same sauce and spread them in a baking tray.

  2. Preheat the oven to 400°F (200°C).

  3. Place the wings and potatoes in the oven and bake for 20 minutes. Flip the wings and bake for another 20 minutes.

  4. Coat the wings with the remaining spicy pepper sauce and serve hot with crispy potatoes.
