How to Make Mexican-Style Corn

Mexican corn is considered one of the most popular comfort foods around the world and is especially enjoyed during cold seasons. As its name suggests, it originates from Mexico. However, the version prepared in Mexico is quite different from the one commonly made in Iran.

In this article, we explain how to prepare homemade Mexican corn step by step.


Ingredients

  • Cooked corn kernels — 300 g

  • Butter — 20 g

  • Sliced mushrooms — 1 cup

  • Mayonnaise — 3 tablespoons

  • Pizza cheese (or shredded mozzarella) — 100 g

  • Salt and pepper — to taste


Instructions

Step 1: Sauté the corn

Place the cooked corn in a pan without oil. Season with salt and pepper and sauté until all the moisture evaporates and the corn becomes dry.

Step 2: Cook the mushrooms

Remove the corn from heat. Slice the mushrooms and sauté them in a separate pan until their water evaporates.

Step 3: Melt the butter

Bring a pot of water to a boil. Place a heat-resistant glass bowl over the water (double-boiler method) and melt the butter inside it.

Step 4: Combine ingredients

Once the butter is melted, add the corn and mushrooms to it. Let them warm slightly, then add the mayonnaise and cheese. Stir well until the cheese melts and evenly coats the corn.

Remove from heat, transfer to a serving dish, and add extra sauce or pepper if desired. Serve warm.


Recipe Variations

Mexican Corn with Corn on the Cob

Remove the kernels from fresh corn cobs and boil them for about 20 minutes until tender. Sauté mushrooms with a little butter, then add the corn, mayonnaise, spices, and finally cheese. Stir until melted.

Mexican Corn with Mushrooms and Sausage

Boil the corn until tender. Add it to a pan with sliced mushrooms and chopped sausage. Season with salt and pepper, then stir in mayonnaise and cheese.

Mexican Corn Without Mushrooms

Follow the main recipe but simply omit the mushrooms.


Tips for Better Flavor

  • You can season with chili powder, black pepper, curry powder, or thyme.

  • Canned or frozen corn works better than raw corn for texture and consistency.

  • Sour cream can replace mayonnaise for a lighter taste.

  • Parmesan or mozzarella can replace pizza cheese.

  • Optional additions include spring onion, garlic, green chili, or chopped sausage.

  • If using fresh corn, separate the kernels first and boil them in salted water for 30–45 minutes before cooking.
