Dark chocolate: 100 g
Cocoa powder: 2 tablespoons
Salep (Tha‘lab): 2 teaspoons
Sugar: 1 cup
Boiled milk: 4 cups
Rosewater: ¼ cup
Vanilla: ½ teaspoon
First, mix the sugar, salep, and cocoa powder together. Then, gradually add the mixture to the boiling milk while stirring continuously.
Place it over heat and let it cook for about 5 minutes, until it reaches a thin pudding-like consistency. If you add the dry ingredients all at once, the mixture may become lumpy.
Next, add the dark chocolate, rosewater, and vanilla. Once everything is fully combined, remove the mixture from the heat.
After it cools down, place it in the freezer for 3 hours. Then remove it and stir well.
Return it to the freezer and take it out every 30 minutes to stir. Do not let it freeze solid. This process usually needs to be repeated about 4 times until the ice cream reaches the right texture.
Finally, leave it in the freezer for about 4 hours. Once ready, transfer it to a serving dish and enjoy.
