One of the healthiest foods is yogurt, which has many benefits and can easily be made at home.
Milk: 3 liters
Yogurt: 3 tablespoons
First, bring the milk to a boil in an enamel or stainless steel pot. Be careful, as the consistency of the yogurt depends on how you boil the milk. If you heat the milk gently, allowing 10 to 20 percent of its water to evaporate and leaving more solid content, you will get thicker yogurt. It is best to use fresh, unpasteurized milk. If you don’t have fresh milk, you can use organic full-fat milk.
Stir the milk continuously to prevent the milk proteins from settling and hardening at the bottom of the pot.
Once the milk has boiled, turn off the heat and pour the milk into the container where you will make the yogurt.
Allow the milk to cool down to about 40°C, so that it doesn’t burn your finger. To test this, dip your little finger into the milk and wait for about 10 seconds. If your finger doesn't get burned, the temperature is just right.
Mix 3 tablespoons of yogurt with a little milk, then add this mixture to the milk. The yogurt should be at room temperature before adding it to the milk.
Now, place the container with the milk and yogurt mixture under a lid and wrap it with a blanket or warm cloth for 4 to 5 hours to prevent the milk from cooling down. After covering the container, do not shake it. Once wrapped, keep the container still.
Remove the yogurt container from the blanket and open the lid. After half an hour, gently place the container in the refrigerator and do not touch it for a few hours.
After about one night, your yogurt will be ready. You can now enjoy it!
