Typically, pizza dough is made with regular water. However, for a richer flavor and to prevent the dough from drying out, you can substitute full-fat yogurt and milk for water.

Here’s a step-by-step guide to making Turkish-style pizza dough, ideal for creating delicious Turkish dishes:

Ingredients

  • Flour: 5 cups

  • Active dry yeast: 1 3/4 teaspoons

  • Sugar: 1/2 teaspoon

  • Warm water (45°C): 1 cup

  • Salt: 2 teaspoons

  • Vegetable oil: 1/2 cup

  • Water: 1/2 cup

Instructions

  1. Activate the Yeast: Dissolve the yeast and sugar in 1 cup of warm water. Let it sit until it becomes frothy.

  2. Mix Dry Ingredients: Combine the flour and salt in a large bowl.

  3. Combine Wet Ingredients: Add the yeast mixture, vegetable oil, and 1/2 cup of water to the flour mixture. Mix until the ingredients are well combined.

  4. Knead the Dough: Transfer the dough to a lightly floured surface and knead it for about 8 minutes until it becomes soft and flexible.

  5. Let the Dough Rise: Shape the dough into a ball and place it in a greased bowl. Cover it with a damp towel and let it rise in a warm place until it doubles in size (about 1 hour).

  6. Shape the Dough: Punch down the dough to release the air, then divide it into 10 equal parts. Shape each part into a ball.

  7. Roll Out the Dough: Using your hands and a rolling pin, flatten each dough ball into a 25 cm circle. The dough should be thin, similar to a crepe.
