Ingredients:
400 grams of lamb liver
100 grams of lamb fat (dumba)
1 large onion
5 cloves of garlic
1 cup of yogurt
4 grilled peppers
5 mushrooms
2 cups of rice
Saffron (as needed)
Salt, black pepper, turmeric (as needed)
Instructions:
First, wash the lamb liver and chop it into small pieces.
Finely chop the lamb fat and set it aside.
Grind the saffron and brew it with some ice to bring out the color.
Prepare the fried onions.
Sauté the lamb fat with the fried onions.
Add the chopped liver and fat to the onions and cook until fully browned.
Add the grilled peppers and sliced mushrooms to the liver, then season with black pepper and salt.
After 5 minutes, remove the pan from the heat and mash the mixture with a pestle until it's well mashed.
To prepare the yogurt sauce, mix the mashed garlic with the yogurt.
Add the yogurt and garlic mixture to the liver and stir well.
