According to SAEDNEWS, Chertemeh Polo is a very delicious dish that originates from Semnan province and has a unique flavor and aroma.Chertemeh Polo is one of these tasty dishes, typically served with rice, and you can surprise everyone at a party by preparing it.

Ingredients:

  • 400 grams of lamb liver

  • 100 grams of lamb fat (dumba)

  • 1 large onion

  • 5 cloves of garlic

  • 1 cup of yogurt

  • 4 grilled peppers

  • 5 mushrooms

  • 2 cups of rice

  • Saffron (as needed)

  • Salt, black pepper, turmeric (as needed)

    Chertemeh Polo

Instructions:

  • First, wash the lamb liver and chop it into small pieces.

  • Finely chop the lamb fat and set it aside.

  • Grind the saffron and brew it with some ice to bring out the color.

  • Prepare the fried onions.

  • Sauté the lamb fat with the fried onions.

  • Add the chopped liver and fat to the onions and cook until fully browned.

  • Add the grilled peppers and sliced mushrooms to the liver, then season with black pepper and salt.

  • After 5 minutes, remove the pan from the heat and mash the mixture with a pestle until it's well mashed.

  • To prepare the yogurt sauce, mix the mashed garlic with the yogurt.

  • Add the yogurt and garlic mixture to the liver and stir well.

  • Meanwhile, place the rice on the stove to boil and cook until tender.

  • Drain the rice, then add a little oil and saffron to the bottom of the pot and steam the rice.

Once the saffron rice is steamed, serve it with the liver mixture.
