According to Saednews, Causa Rellena is a traditional Peruvian cold appetizer made with seasoned yellow potato purée. The potatoes are flavored with fresh lime juice, olive oil, salt, and ají amarillo paste, then layered with a variety of fillings such as chicken, tuna, shrimp, or vegetables. The word “Rellena” refers to the stuffed or filled style of the dish. One popular version, made with chicken and mayonnaise, combines a soft, creamy filling with the fresh acidity and gentle heat of the seasoned potatoes.
What makes Causa Rellena different from an ordinary potato salad is its use of seasoned potato purée as the structural base and its distinctive layered presentation. It is usually prepared in small individual molds or as one larger dish, then carefully turned out onto a serving plate so that the colorful layers are visible.
The following ingredients make approximately four servings.
About 570 g yellow potatoes, such as Yukon Gold or Russet
2 tablespoons ají amarillo paste
2 tablespoons olive oil
Juice of 1–2 fresh limes

1 large cooked chicken breast, shredded
½ cup cooked peas
½ cup cooked carrot, diced
1 roasted red bell pepper
1 shallot or small red onion

Causa Rellena is an elegant version of the classic Peruvian causa, combining layers of seasoned potato, chicken salad, avocado, and a creamy spicy sauce.
Wash the potatoes and boil them until completely tender. Peel them while they are still warm and mash them using a potato masher or fine grater.
Add the ají amarillo paste, olive oil, fresh lime juice, salt, and cayenne pepper while the potatoes are warm. These ingredients provide the dish with its characteristic flavor.
Adjust the amount of lime juice and pepper according to your taste. A balanced combination of acidity and mild heat is an important part of the traditional flavor of causa.
Shred or finely dice the cooked chicken breast. Combine it with the peas, cooked carrots, roasted red bell pepper, chopped shallot, and fresh cilantro.
Add a little lime juice, mayonnaise, salt, and cayenne pepper. Mix until the filling is creamy but still fresh and flavorful. This chicken mixture forms the main savory layer of the dish.
Peel the ripe avocados and cut them into thin slices.
The avocado adds a smooth, creamy texture and rich flavor that balances the acidity of the lime and the mild heat of the ají amarillo.
Use individual ramekins with a capacity of approximately 180 ml.
Cover the bottom of each mold with a layer of potato purée and gently press it down with the back of a spoon. Add a layer of avocado, followed by the chicken salad.
If desired, repeat the layers and finish with another layer of potato purée.
Press the layers gently but firmly enough to help the causa hold its shape when removed from the mold.
For the accompanying sauce, combine approximately 80 ml of mayonnaise with 1 tablespoon of sour cream, 1 crushed garlic clove, and 2 teaspoons of ají amarillo paste.
If the sauce is too thick, add a small amount of water until it reaches the desired consistency.
The creamy, mildly spicy sauce provides a flavorful accompaniment to the causa.
Carefully turn each mold upside down onto a serving plate. Spoon some of the sauce alongside each portion.
For a simple finishing touch, garnish with fresh cilantro leaves or slices of avocado.

Choose the right potatoes: Yellow potatoes with a naturally floury texture produce a smoother and more flavorful purée.
Season the potatoes while warm: Warm potatoes absorb the seasonings more effectively.
Use ripe avocados: An underripe avocado will not provide the desired creamy texture or flavor.
Press the layers firmly: Properly compacted layers are less likely to collapse when the causa is unmolded.
Serve it chilled: Causa Rellena is traditionally served cold, so keep it refrigerated until ready to serve.
