Step 1: Preparing the Chicken or Fish

For chicken tahchin:
First, slice the onion into thin strips and sauté it in some oil until softened. Add the chicken pieces along with crushed garlic, turmeric, and black pepper, then sauté briefly until the chicken changes color. Add two cups of boiling water to the pot and allow the chicken to cook over low heat. Add salt and lime juice near the end of cooking.

Once the chicken is fully cooked, remove it from the broth and cut it into smaller pieces or shred it. Strain the chicken broth and keep it aside for later use.
