Dough ingredients:
White flour: 3 to 4 cups
Lukewarm milk: 1 cup
Lukewarm water: ½ cup
Sugar: 2 tablespoons
Instant yeast: 1 tablespoon
Vegetable oil: 2 tablespoons
Salt: 1 teaspoon
For the glaze (topping):
Egg yolk: 1
Brewed saffron: 1 teaspoon
Sesame seeds and black seeds: 1 tablespoon

Mix lukewarm water with 1 tablespoon of sugar and the instant yeast in a suitable bowl. Cover the bowl and place it in a warm area for 5 to 10 minutes until the yeast activates.
In another bowl, combine lukewarm milk, salt, oil, and the remaining sugar. Mix well until smooth.
After 10 minutes, add the activated yeast mixture to the milk mixture and stir until combined.
Sift the flour three times and gradually add it to the mixture while stirring.
Knead the dough well until it becomes smooth and elastic.
Grease a large bowl, place the dough inside, cover it with plastic wrap and a cloth, and let it rest in a warm place.
After about 1 hour, when the dough has doubled in size, knead it lightly to release air.
Divide the dough into 4 equal portions.
Roll each piece into a round shape about 1 cm thick.
Place the dough pieces on a baking tray lined with parchment paper.
Cover them with a cloth and let them rest for 30 minutes.
Mix the saffron and egg yolk until fully combined.
After 30 minutes of resting, press patterns into the dough using your fingers.
Brush the surface with the saffron–egg mixture.
Sprinkle sesame seeds and black seeds on top.

Preheat the oven to 180°C (350°F) for 10 minutes.
Bake the breads for 40 to 50 minutes.
To achieve a golden top, turn on the grill mode for a few minutes at the end.
Do not add too much flour; otherwise, the dough will become dry.
To keep the bread soft, cover it with a plastic bag and cloth after baking.
