Ground meat: 200 g
Spring roll wrappers: 30 sheets
Vermicelli noodles: 50 g
Spring onions: 6 stalks
Garlic: 2 cloves
Large carrot: 1
Grated ginger: 1 tbsp
Chopped coriander: 3 tbsp
Soy sauce: 2 tbsp
Sweet chili sauce: 2 tbsp
Fish sauce: 1 tbsp
Egg white: 1
Cooking oil: as needed

First, clean and wash the shrimp and let the excess water drain. Meanwhile, prepare the garlic and spring onions by cleaning and washing them.
Peel and grate the carrot and ginger. Finely chop the spring onions after drying them. Crush the garlic and mix it with the spring onions, grated carrot, and ginger.
Heat a pan over low heat and add some oil. Sauté the mixed vegetables in the oil.
Add the chopped coriander while sautéing. Cook until the vegetables become soft.
Bring a pot of water to a boil over high heat. Add the ground meat and break it apart with a wooden spoon while cooking.
Once the vegetables are softened, add the cooked meat mixture to the pan and stir until the meat changes color and all moisture evaporates.
Boil the vermicelli for about 5 minutes until soft, then drain and cut into small pieces. Add it to the meat and vegetable mixture.
Add the shrimp as well and cook while stirring for about 10 minutes until the shrimp is fully cooked.
Then add sweet chili sauce, soy sauce, and fish sauce. Stir for another 2 minutes so the flavors combine well.
Remove from heat and let the filling cool completely.
Heat enough oil in a deep pot for frying the spring rolls.
Beat the egg white to use as glue for sealing the wrappers.
Place some filling onto each spring roll wrapper. Brush the edges with egg white and roll tightly.
Fry the rolls in hot oil until golden (about 1 minute), then remove and place on paper towels to absorb excess oil.
Serve hot with your favorite dipping sauce.
