How to Make Brined Olives with Vinegar and Salt at Home

According to Saednews, Salted olives are one of the most popular olive products. Olives and their derivatives are widely enjoyed for their delicious taste and beneficial health properties. Various olive pickles, marinated olives, and salted olives are served as flavorful side condiments alongside meals. They can even be used in both Persian and international salads.

However, before anything else, you need to learn how to remove the bitterness from olives. This can be done through traditional or industrial methods. In the traditional method, no chemicals are used, making it healthier. But if you use chemical methods to sweeten olives, you must be more careful, although it takes less time.


Ingredients for Homemade Salted Olives

  • Olives: 1 kg

  • Salt: 2 tablespoons

  • Vinegar: 1/2 cup


Method for Making Salted Olives with Vinegar and Salt

First, clean the olives and place them in a strainer. Using a knife, make small cuts on four sides of each olive close to the pit. You can use either cracked or whole olives.

Next, place the olives in a large bowl and cover them with clean water. Let them soak for 7 to 10 days, changing the water twice daily.

After about 3 weeks, prepare a strong saltwater brine in a large container and add the olives. During the second and third weeks, gradually add more salt to help the olives cure properly. Be patient, as making high-quality salted olives requires time and care.

After the third week, wash the olives thoroughly, rinse them several times, and place them in a strainer to remove excess salt. Then soak them again in clean water for 48 hours to further reduce saltiness.

Now add vinegar and salt to clean water and mix well. Transfer the olives into a sterilized glass jar, seal it tightly, and store it in the refrigerator. Your salted olives are ready to serve.
