  1. For a light, healthy version, cook the chicken with 2 cups of water and some turmeric over medium heat until partially cooked.

  2. Dice the onion finely and sauté in oil. Add turmeric and black pepper.

  3. Shred or dice the chicken and add to the onions, cooking briefly.

  4. Stir in tomato paste and cook until its raw flavor is gone.

  5. Add 4 cups of hot water to the pot and reduce heat to low.

  6. Peel and grate the tomato, then add it to the pot after 20 minutes.

  7. Dice the carrots and add them, followed by diced or sliced potatoes after 15 minutes.

  8. Season with salt and black pepper.

  9. Break the vermicelli into smaller pieces and add to the soup.
