Gheimeh Nesar is one of the authentic and traditional dishes of Qazvin city, prepared with a delicious combination of meat, saffron, and various nuts. This festive dish is served at parties and gatherings due to its unique and special flavor. Below is the recipe to prepare this delicious meal.


Ingredients

  • 300 grams veal shank (cut into small pieces)

  • 2 large onions (chopped)

  • 2 tablespoons tomato paste

  • 1 teaspoon turmeric

  • Salt and black pepper to taste

  • 1 tablespoon dried rose petals

  • 1 cinnamon stick

  • 5–6 black peppercorns

  • 3–4 green cardamom pods

  • 1 teaspoon brewed saffron

  • 50 grams butter

  • Orange peel strips (as desired)

  • Almond and pistachio slivers (as desired)

  • 2 tablespoons barberries


Preparation Steps

  1. Sautéing onions and meat:
    First, sauté the onions in some oil until golden and soft. Then add the chopped veal shank to the onions and sauté together until the meat changes color. Add turmeric and black peppercorns, and stir until the spices release their aroma.

  2. Adding spices and tomato paste:
    After sautéing the meat, add the tomato paste and mix well to remove its raw taste. Then add the cinnamon stick, cardamom, and dried rose petals to the pot.

  3. Cooking the meat:
    Add several cups of water to the pot to cover the meat. Cover the pot and let the meat cook slowly over low heat until tender.

  4. Preparing the garnishes:
    At this stage, sauté the orange peel strips (previously soaked to remove bitterness) in butter. Then sauté almond and pistachio slivers in butter as well to release their aroma. Sauté the barberries with a little butter and saffron.

  5. Adding saffron:
    In the last stage of cooking the meat, add the brewed saffron to the stew to complete the aroma and color of your Gheimeh Nesar. Let the stew simmer a few more minutes so the flavors combine.

  6. Serving Gheimeh Nesar:
    Serve Gheimeh Nesar with saffron rice. For garnish, sprinkle the mixed slivers (orange peel, almonds, pistachios) and barberries over the rice. This decoration enhances both the beauty and flavor of the dish.


Tips

  • To reduce the bitterness of the orange peel strips, you can boil them several times, discarding the water each time.

  • Using butter in this recipe enhances the flavor, but you can substitute with oil if you prefer.
