In this article, we have prepared the recipe and tips for making pumpkin brownies for you. Pumpkin brownies are a type of cake and dessert that takes about 25 minutes to prepare the ingredients. The cake needs about 35 minutes to bake fully and be ready. You can serve the brownies with tea or coffee as a dessert or snack. For long-term storage, be sure to keep the brownies in airtight containers in the refrigerator to prevent them from drying out or losing flavor.
Grated chocolate (flavor of choice): 115 grams

Step 1: Cut and cook the pumpkin
To start making pumpkin puree, cut the pumpkin into large pieces, remove the seeds, and put the pieces (with skin on) into a pot. Add a little water on top and cover the pot to help them cook faster. When the pumpkin softens, drain the water and let it cool. Peel the pumpkin and puree it using a blender or mash it with a fork.
Step 2: Add cream cheese, sugar, and vanilla to the puree
Add cream cheese, sugar, and vanilla extract to the puree and blend again until completely smooth and combined.
Washing and cutting the pumpkin, removing seeds, then placing the slices on a baking tray. Bake in a preheated oven at 200°C (392°F) for 1 hour until the pumpkin is fully cooked and soft. Mash or puree afterward. Steaming or oven-baking pumpkin preserves its flavor best.
Step 1: Prepare the brownie batter
Preheat the oven to 200°C (392°F). In a bowl, chop the chocolate and add chopped butter. Place the bowl over simmering water (bain-marie) to melt the mixture completely. Let it cool, then add sugar, vanilla, salt, and eggs. Gradually sift and add the flour and mix everything into a smooth batter.
Step 2: Pour batter into the baking pan
Grease the baking pan or line it with parchment paper. Pour two-thirds of the chocolate batter into the pan. Spread the prepared pumpkin puree on top, then pour the remaining chocolate batter over the puree to form three layers. Use a wooden skewer to swirl the layers, creating a marbled effect.
Step 3: Prepare the ganache topping
Bake the cake in the oven at 180°C (356°F) for 30-35 minutes. Meanwhile, prepare the ganache by heating the cream until warm, then adding the grated chocolate and stirring until melted and smooth. After baking, test the cake by inserting a toothpick; if it comes out clean, the cake is done.
Step 4: Serve the pumpkin brownies
Allow the cake to cool, then remove it from the pan and place on a cooling rack. Pour the ganache on top. Optionally, dust with cocoa powder or shredded coconut for decoration. Cut into pieces and serve.
In this variation, the main ingredient is pumpkin puree and the top layer is decorated with cream cheese mixed with sugar and vanilla. The ingredients and proportions are similar to the first method, but it’s better not to use cocoa or chocolate powder in this version to preserve the pumpkin’s natural color.
