Ingredients for Crispy Potatoes:
2 medium potatoes
4 tablespoons melted butter
1 cup grated Parmesan cheese
½ teaspoon black pepper
1 tablespoon garlic powder
1 tablespoon paprika
1 teaspoon salt
Chopped parsley for garnish
How to Prepare Crispy Potatoes:
Preheat the oven to 160°C (320°F). Wash the white potatoes carefully, then insert a wooden skewer into each potato.
Using a sharp, thin knife, make diagonal and circular cuts on the potatoes.
Gently stretch the potatoes to create a spiral shape without breaking them.
Melt the butter and brush it over the entire surface of the potatoes.
In a medium bowl, mix the Parmesan cheese, black pepper, garlic powder, paprika, and salt together.
Place the skewered potatoes on the bowl and sprinkle the mixture over all surfaces of the potatoes.
Line a baking tray with parchment paper and arrange the potatoes on it.
Bake in the oven for 20 to 25 minutes until the potatoes are fully crispy and golden.
Finally, garnish with chopped parsley and serve.
How to Prepare the Special Sauce:
To make the sauce for this delicious dish, place a pan on the stove. Add 100 grams of butter and allow it to melt. Add 3 grated garlic cloves and sauté the butter and garlic until the garlic softens a bit and its aroma is released. Then add 1 tablespoon of flour to the pan and sauté the flour with the butter and garlic until the rawness of the flour is gone. Do not let the flour brown or darken.
Next, slowly add 150 ml of chicken broth to the flour, butter, and garlic mixture, stirring gently to prevent lumps. Once the mixture comes to a boil, add 200 ml of heavy cream, 30 grams of Parmesan cheese, and 1 tablespoon of grated orange zest. Continue stirring the mixture until it gently boils in small bubbles.
After a while, turn off the heat and remove the pan from the stove. Taste the sauce and add salt and pepper if necessary.
