SAEDNEWS: Tabriz Chive Kuku” is a local dish of Azerbaijan that doesn’t require much time to prepare, yet despite being quick, it is also delicious.

Ingredients for Tabriz Leek Kuku
Eggs: 3
Boiled potatoes: 4 small
Fresh leeks: 200 g
Salt: 1 level teaspoon
Turmeric: 1/2 teaspoon
Black pepper: 1/4 teaspoon
Cooking oil: as needed
Instructions for Tabriz Leek Kuku
Clean and wash the leeks, then place them in a colander to drain.
Wash the potatoes and place them in some water over heat to cook. After cooking, peel the potatoes and grate them.
Chop the leeks and mix them with the grated potatoes, eggs, salt, pepper, and turmeric until well combined.
Place a non-stick pan over medium-low heat, add some oil, and when the oil is hot, scoop the mixture with a spoon into the pan. Flatten the surface with the back of the spoon and fry both sides until golden.
To prevent your boiled potato kuku from falling apart, there are two methods: either use fewer eggs so the mixture is firm, or use more eggs so the mixture is loose and spoonable.
