In the south, the term hoory refers to any dish prepared with chicken, fish, or meat, with fish hoory being the most popular. You can use a variety of fish for hoory rice, but in southern Iran, hoor fish is most commonly used. The fragrant herbs in this rice add a unique aroma and flavor, making it truly irresistible. Ingredients for Tuna Hoory
1 medium onion
4 cloves garlic
3 tomatoes
1 large can of tuna
2 tablespoons dried dill
2–2.5 cups rice
1 teaspoon coriander seeds
1 teaspoon turmeric
½ teaspoon red chili powder
½ teaspoon black pepper
1 teaspoon salt
Prepare the aromatics: Finely dice the onion. Heat 2 tablespoons of vegetable oil in a suitable pot over medium heat until slightly hot. Add the onions and sauté until they soften. Once the onions start to change color, finely chop the garlic and add it to the pot, cooking until golden.
Add spices: Mix in the coriander seeds, turmeric, black pepper, red chili, and salt. Sauté for another minute to release the spices’ aroma.
Prepare the tomatoes: Peel the tomatoes and blend them into a smooth puree. Add the puree to the pot and cook for about 10 minutes, allowing the liquid to reduce.
Add the tuna: Open the tuna can, discard any excess oil, and add the tuna to the pot. For safety, make sure the tuna is boiled in water for 20 minutes before use to ensure the can is safe (a reliable method to check tuna quality). Mix the tuna thoroughly with the other ingredients until evenly combined.
