Turkish Döner Kebab: A Flavorful Rotisserie Delight

According to the Family Magazine section of SaedNews, Turkish döner kebab, also known as rotating or spinning kebab, originates from the city of Bursa, south of Istanbul. Traditionally, this dish was cooked horizontally over hot coals.

Ingredients for Turkish Döner Kebab

  • 500 g ground meat (a mix of lamb and beef)

  • 2 onions

  • 1 tsp garlic paste

  • 1 tsp thyme (not powdered)

  • ½ tsp oregano

  • 1 tsp paprika

  • 1 tsp Aleppo pepper (pul biber)

  • Salt and black pepper, to taste

  • 6 tbsp yogurt

  • 4 tbsp parsley

  • 2 tbsp sumac

  • 1 tbsp mayonnaise

  • 4 pickles

  • 1 tsp garlic powder

  • A splash of lemon juice

How to Make Turkish Döner Kebab

  1. Prepare the Meat: Place the ground meat in a food processor. Add one grated onion (with the juice removed) and all the spices: garlic paste, thyme, oregano, paprika, Aleppo pepper, salt, and black pepper (1 tsp each). To tenderize the meat, add 3 tablespoons of yogurt and mix until well combined.

  2. Shape and Freeze: Spread the meat on parchment paper, roll the edges to form a sausage-like shape, and freeze for at least 6 hours until firm.

  3. Prepare the Onion Mixture: Thinly slice the remaining onion, then toss with sumac and 2 tablespoons of chopped parsley. Set aside.

  4. Make the Sauce: Mix 3 tablespoons of yogurt with 1 tablespoon of mayonnaise, garlic powder, 2 tablespoons of chopped parsley, grated pickles, lemon juice, salt, and black pepper.

  5. Cook the Meat: Remove the meat from the freezer and peel off the parchment. Using a sharp knife, slice the meat very thinly. Heat a skillet with a little oil, then cook the slices for 2–3 minutes on each side over high heat to prevent them from releasing water.

  6. Assemble the Sandwich: Slice a French baguette or any bread like taftoon. Spread a layer of sauce, then add lettuce, tomato, the cooked döner slices, and the onion-parsley-sumac mixture. Drizzle more sauce on top and enjoy.
