First, cut the onion into large slices and place it in a suitable bowl. Grate 2 cloves of garlic and add them to the bowl along with vegetable oil, lemon juice, Greek yogurt, a pinch of salt, black pepper, thyme, and paprika.
Mix the ingredients in the bowl until well combined. Then cut the chicken or red meat into thin strips and add them to the onion and yogurt mixture. Mix thoroughly.
Cover the bowl with plastic wrap and refrigerate for 1 hour to let the meat absorb the flavors. After 1 hour, remove the meat from the fridge. Place a suitable pan over heat and add butter.
Remove the meat strips from the marinade and fry them in the butter. While frying, mix the mayonnaise with 3 tablespoons of Greek yogurt. Grate the remaining garlic and add it to the sauce.
Once the meat is cooked, place the pita breads on a working surface. Spread some pomegranate paste evenly on each bread. Place the cooked meat on top.
Pour the yogurt and mayonnaise sauce over the meat. Chop the tomato, pickles, and lettuce, and add an appropriate amount to each pita. Finally, roll the breads into wraps and serve.
