1 chicken breast
3 tbsp olive oil
1 garlic clove
1 tbsp vinegar
1 tbsp oregano
1/2 tsp salt
1/4 tsp black pepper
2 tbsp mustard
1 lemon
1 head of lettuce
1/2 cup feta cheese
3 cucumbers
1 tomato
1 onion
1/4 cup pitted olives
2 tbsp fresh dill
Bone the chicken breast and place it between two sheets of plastic wrap. Use a meat mallet to gently flatten it. In a bowl, add olive oil, mashed garlic, vinegar, oregano, salt, and black pepper. Massage the mixture into the chicken, cover it, and let it marinate for 15 minutes. If you have more time, you can let it marinate for up to 1 hour.
To make the salad dressing, mix together mustard, lemon juice, 1 teaspoon of vinegar, lemon zest, and some oregano. Stir to combine until the dressing is ready. If you have shallots at home, you can add them to the dressing.
