Peach Pickle with Tamarind (Peach Chutney Recipe)

Ingredients (for 2–2.5 kg yield)

Vinegar

750 ml (3 cups)

Sugar

Firm peaches (saffron variety)

1 kg


Preparation Method

1. Prepare tamarind base

  • Mix tamarind with vinegar.

  • Let it rest for 12 hours until the tamarind softens completely.

  • Strain the mixture to remove seeds and skins, forming a smooth sauce.

2. Cook the tamarind sauce

  • Add sugar to the tamarind sauce.

  • Heat over low flame until it thickens.

  • Remove from heat and allow it to cool.

3. Prepare the peaches

  • Bring a pot of water to a boil.

  • Place peaches in boiling water for 2–3 minutes.

  • Transfer immediately to cold water.

  • Peel off the thin skins.

4. Cook the fruit

  • Chop the peaches.

  • Cook them with a small amount of water (steaming is also recommended).

5. Combine and store

  • Mix the tamarind sauce with the cooked peaches.

  • Pour into a sealed container and store.
