Ingredient | Amount |

Tamarind | 500 g |
Vinegar | 750 ml (3 cups) |
Sugar | 300 g |
Firm peaches (saffron variety) | 1 kg |

Mix tamarind with vinegar.
Let it rest for 12 hours until the tamarind softens completely.
Strain the mixture to remove seeds and skins, forming a smooth sauce.
Add sugar to the tamarind sauce.
Heat over low flame until it thickens.
Remove from heat and allow it to cool.
Bring a pot of water to a boil.
Place peaches in boiling water for 2–3 minutes.
Transfer immediately to cold water.
Peel off the thin skins.
Chop the peaches.
Cook them with a small amount of water (steaming is also recommended).
Mix the tamarind sauce with the cooked peaches.
Pour into a sealed container and store.
