How to Make Yalda Night Cookies (Without Oven or Mixer)
These Yalda Night cookies are festive, easy to prepare, and perfect for celebrating the longest night of the year in Persian tradition. Here's a simple no-oven, no-mixer recipe:
2 cups wheat flour (sifted)
1/2 cup powdered sugar
100 grams butter (or vegetable oil if preferred)
1/4 cup yogurt (plain, unsweetened)
1/2 tsp baking powder
1/2 tsp ground cardamom (optional, for aroma)
Chopped nuts or dried fruits (pistachios, walnuts, or dried pomegranate seeds) – for garnish
Melt the Butter:
Gently melt the butter and let it cool slightly. If using oil, skip this step.
Mix the Wet Ingredients:
In a bowl, combine the melted butter with yogurt and mix well until smooth.
Add Dry Ingredients:
Gradually add powdered sugar, baking powder, and cardamom to the mixture. Stir until well combined.
Incorporate the Flour:
Slowly add flour while kneading the dough by hand until you get a soft, non-sticky consistency. If needed, add a bit more flour.
Shape the Cookies:
