How to Make Yalda Night Cookies (Without Oven or Mixer)

These Yalda Night cookies are festive, easy to prepare, and perfect for celebrating the longest night of the year in Persian tradition. Here's a simple no-oven, no-mixer recipe:


Ingredients:

  • 2 cups wheat flour (sifted)

  • 1/2 cup powdered sugar

  • 100 grams butter (or vegetable oil if preferred)

  • 1/4 cup yogurt (plain, unsweetened)

  • 1/2 tsp baking powder

  • 1/2 tsp ground cardamom (optional, for aroma)

  • Chopped nuts or dried fruits (pistachios, walnuts, or dried pomegranate seeds) – for garnish


Instructions:

  1. Melt the Butter:
    Gently melt the butter and let it cool slightly. If using oil, skip this step.

  2. Mix the Wet Ingredients:
    In a bowl, combine the melted butter with yogurt and mix well until smooth.

  3. Add Dry Ingredients:
    Gradually add powdered sugar, baking powder, and cardamom to the mixture. Stir until well combined.

  4. Incorporate the Flour:
    Slowly add flour while kneading the dough by hand until you get a soft, non-sticky consistency. If needed, add a bit more flour.

  5. Shape the Cookies:
    Form small balls from the dough, flatten them slightly, and garnish with chopped nuts or dried fruit.

  6. Cook on the Stovetop:
    Place the cookies in a non-stick pan lined with parchment paper or lightly greased. Cover the pan with a lid and cook on very low heat for about 15–20 minutes or until the bottoms are lightly golden.

  7. Cool and Serve:
    Let the cookies cool completely before serving. They pair wonderfully with Persian tea!
