Recipe for Pinto Bean Dish with Potatoes and Mushrooms, the Best Breakfast Ever / Its Taste is Incredible, and Its Energy is Unmatched! + Video

Ingredients for Pinto Bean Dish:

  • 400 grams of pinto beans

  • 2 potatoes

  • 2 tomatoes

  • 1 onion

  • Salt, black pepper, and hot pepper as needed

  • 1 teaspoon of sweet paprika (heaping)

  • 1 teaspoon of turmeric (heaping)

Preparation:

  1. First, wash the pinto beans with water, and if you have time, soak them for 12 hours or even overnight. However, if you're short on time, put the beans in a pressure cooker, close the lid, and let them cook for 15 minutes. Then, drain the beans and rinse them. Put them back in the pressure cooker to remove their gas-producing properties.

  2. Cut the two tomatoes in half, peel and leave the onion whole, and put both into the pressure cooker along with a jug of water. If desired, you can add a few garlic cloves, some bell pepper, and a piece of lamb bone to cook with the beans. If you don’t have these ingredients, that’s fine. Close the pressure cooker lid and allow it to cook for 15 minutes after hearing the sound of steam coming out. If you're using a regular pot, start timing after the water boils and let it simmer for 45 minutes.

  3. After the time has passed, remove the cooked tomatoes and onion from the pressure cooker. Add turmeric, sweet paprika powder, hot pepper, black pepper, and salt, and mix with an immersion blender. Add this mixture to the pinto beans.

  4. Cut the two medium potatoes into triangle shapes and add them to the dish. You can also use mushrooms in the dish if desired. Taste the salt and adjust if needed. Close the pressure cooker lid and let it cook for another 20 minutes. Make sure to start the timer once you hear the steam sound from the pressure cooker.

  5. Once the time has passed, your dish is ready. You can enjoy this delicious meal for breakfast or lunch with olive oil, fresh lemon, and dried oregano. Enjoy!

Golden Tips:

  • Instead of adding raw onion to the dish to cook, you can finely chop and fry it first, then add it to the dish.

  • If you don't have tomatoes, you can use tomato paste. Sauté it with fried onions and the other spices mentioned above, then add it to the dish and let it cook through.

  • If your pinto bean dish is too watery and lacks consistency, you can add one heaping tablespoon of flour, sauté it with fried onions and tomato paste, and then add it to the dish.
