Ingredients for Grilled Mushrooms:
4–5 large fresh mushrooms
1 clove garlic, grated
1 tablespoon lemon juice
1 tablespoon chopped parsley or cilantro
Salt, black pepper, and red pepper to taste
2 tablespoons olive oil
Cherry tomatoes, small onions, green peppers: as desired
Wooden skewers: as needed
Instructions for Grilled Mushrooms:
Wash the mushrooms and pat them dry thoroughly with a cloth to remove all moisture.
Mix the mushrooms whole or halved with some salt, pepper, lemon juice, and garlic until evenly coated.
Place them in a mixture of olive oil and chopped parsley and refrigerate for 1–2 hours.
After marinating, thread the mushrooms onto skewers, alternating with tomatoes, peppers, and onions.
Grill over low heat until cooked and serve as a light meal.
