Step-by-Step Recipe for a Crispy, Flavorful Yazdi Cake
Take all ingredients out of the refrigerator an hour before baking to reach room temperature. Preheat the oven to 200°C (392°F).
Crack the eggs into a suitable bowl and whisk with an electric mixer until smooth. Add sugar and continue mixing until the mixture turns creamy.
Pour in the vegetable oil and mix thoroughly.
Gradually add the yogurt, followed by rosewater, cardamom, and honey, mixing after each addition. Scrape the bowl walls to combine all ingredients.
Sift the flour and baking powder together, then gradually incorporate them into the wet mixture in stages. Mix gently to maintain a smooth batter.
Quickly transfer the batter to your muffin molds lined with Yazdi Cake paper cups, filling about two-thirds of each cup. For small Yazdi molds, ensure not to overfill. Press a small indentation in the center of each cake and sprinkle some sesame seeds.
Bake the cakes in the preheated oven at 200°C (392°F) for 10 minutes until they puff up. Reduce the oven temperature to 180°C (356°F) and bake for another 10 minutes until golden and fully cooked.
