Ingredients for the Dough:
All-purpose flour: 1¼ cups
Egg yolk: 1
Grated cheddar cheese: 1 cup
Cold butter: 115 g
Salt and black pepper: to taste
Lemon zest: 1 tsp
Ingredients for the Filling:
Cherry tomatoes: 300 g
Mascarpone or cream cheese: 20 g
Grated garlic: 1 clove
Fresh lemon juice: 2 tsp
Salt, black pepper, paprika: to taste
Olive oil: 2 tbsp
For Brushing:
Egg: 1
Parmesan cheese: as desired
For Garnish:
Fresh parsley: as desired
Start by placing the flour and cold, chopped butter into a food processor and pulse for one minute until the butter is fully mixed with the flour.
Next, add the egg yolk, salt, lemon zest, and cheddar cheese, and pulse for another minute until a uniform dough forms.
Gather the dough, flatten it into a plastic bag, and refrigerate for 30 minutes to rest.
Meanwhile, cut the cherry tomatoes in half, place them in a bowl, sprinkle with a little salt, then drain in a sieve to remove excess liquid.
Mix mascarpone cheese, grated garlic, lemon juice, and salt together.
Remove the dough from the fridge, place it on a work surface, and roll it out with a rolling pin.
Place the dough on a baking tray. Spread the cheese mixture evenly over the dough.
Arrange the tomatoes on top and fold the edges of the dough slightly inward.
Mix the egg with Parmesan cheese and olive oil, then brush it around the edges of the dough.
Bake in a preheated oven at 200°C (390°F) for 40 minutes, until the edges of the dough are golden brown.
Remove from the oven and transfer the galette to a serving dish.
Garnish with extra Parmesan and fresh parsley, and enjoy!
