According to SAEDNEWS, To prepare fried onions, always use fresh and high-quality onions. If the onion is soft inside or has a bad odor, do not use it, as the fried onions will spoil over time.

Steps to Follow for Long-Term Storage of Fried Onions

Chopping and Blanching Onions

Chop the onions into your desired size. Bring enough water to a boil in a pot. Place the chopped onions in the boiling water for a few minutes just until they soften slightly. Then, drain the onions in a colander and rinse them with cold water.

Drying the Onions

After draining the water from the onions, spread them out on a clean kitchen cloth to dry completely. Place a large, non-stick pan or pot on the heat, and once it’s hot, add enough cooking oil. Due to the blanching process, the onions won’t absorb much oil, but the oil will remain sufficient to achieve crispy fried onions. Let the oil heat up before frying.

Fry some of the onions with salt and turmeric. Once cooked, quickly remove them from the oil to prevent burning. Place the fried onions in a metal colander or on a paper towel to drain excess oil. You can store the fried onions in the refrigerator or freezer. When storing in the refrigerator, keep them in an airtight container.

Suitable Container for Freezing

To freeze onions, make sure to use a zip-lock bag and remove the air using a straw. This method is ideal for crispy fried onions. If you want the fried onions to be brown and sticky, suitable for dishes like Ash Reshteh, there's no need to blanch them first. Instead, sauté the onions with a little salt in a pot, without oil, until they soften slightly, then add the oil. For this type of fried onion, there's no need to drain the oil.

Storing Fried Onions in the Refrigerator

If you plan to use the onions within 2 to 3 days, store them in an airtight container in the refrigerator. However, this method is not recommended for long-term storage. When fried onions are kept in the fridge, the low heat they receive during reheating may not fully eliminate bacteria or toxins. Therefore, it’s best not to store fried onions in the refrigerator for extended periods.

Storing Fried Onions in the Freezer

Fried onions can be stored in the freezer for 3 to 6 months. However, we recommend no more than 6 weeks, as this is the period when their flavor and aroma are best preserved, and it also helps prevent contamination and bacterial growth.

Nutritional Value of Fried Onions

Frying onions reduces their nutritional value. Raw onions are a good source of vitamins C and B, which are great for the immune system, but frying causes them to lose these vitamins.

When you fry onions, some of their nutritional value is lost, and freezing them further diminishes their nutrients. They also won’t retain the same fresh quality. Therefore, it’s best to consume foods fresh and raw to maintain their nutritional benefits.
