Ingredients

  • Chicken breast: 1

  • Grated onion: 1 large

  • Olive oil: 2 tablespoons

  • Carrots: 2

  • Chopped herbs (such as cilantro, dill, tarragon, parsley, basil): 6 tablespoons

  • Lemon juice: 5 cups

  • Tomato juice: 2 cups

  • Salt, black and red pepper, turmeric: to taste

  • Cinnamon: to taste

How to Make Chicken Roll

Step 1:

To prepare the chicken roll, first cut the chicken breast with a knife from the sternum towards the sides, without damaging it, to divide it into two separate pieces. Then, cut each piece in the middle to open it up into a wide flat piece.

Prepare a mixture of salt, peppers, turmeric, olive oil, onion, and lemon juice. Place the chicken pieces in the mixture and let them marinate in the refrigerator for 6 to 7 hours.

Step 2:

During this time, cook the carrots whole by boiling or steaming them.

Step 3:

After the meat is prepared, place it in plastic wrap or a freezer bag so that both sides are covered. Then, use a meat mallet to pound it until it becomes thinner and wider.

Step 4:

Next, remove the meat from the plastic wrap and lay it on a tray. Sprinkle some salt, pepper, turmeric, and cinnamon on top. Then, add a layer of chopped herbs and place the cooked carrots on top.

Bring the edges of the meat together, and to ensure it stays closed, you can tie it with clean thread.

Step 5:

Place the rolled chicken breast in the desired cooking dish and cook it over low heat with tomato juice, a little salt, and turmeric.

Once the rolls are cooked, arrange them in a dish, remove the thread, and after they cool slightly, slice them into desired portions and arrange them on a serving plate.
