  • 200 grams of potatoes

  • 2 onions

  • 500 grams of mushrooms

  • 1 cup of chicken broth

  • 1 lemon

  • 100 grams of cream

  • 1 tablespoon of chopped parsley

  • 1 tablespoon of chopped basil

  • 25 grams of butter

  • Salt and pepper to taste

How to Make Potato and Mushroom Soup

To prepare potato and mushroom soup, start by washing and peeling the potatoes, then cutting them into small pieces. Place the chopped potatoes into a pot with the chicken broth, and cook them over medium heat for 20 minutes. Wash the mushrooms with cold water, add lemon juice to them, and then chop them. Also, chop the onions.

Next, melt the butter in a pan, add the chopped mushrooms and onions, and sauté them until the mushrooms release their moisture. Once done, remove the pan from the heat.

After the potatoes are cooked, mash them using a blender, and add the smooth mashed mixture to the sautéed onions and mushrooms. Add the cream to this mixture and bring it to a boil. After a while, your soup will be ready. Garnish with chopped basil and parsley before serving.
