Boiled potatoes: 500g
Lamb meat: 250g
Grated Parmesan cheese: 25g
Fresh parsley (finely chopped): 2 tablespoons
Sifted flour: 100g
Eggs: 2
Breadcrumbs: 150g
Salt and pepper: To taste
Chopped mint leaves: 1 handful
Brown sugar: 1 tablespoon
Vinegar: 3 tablespoons
Boiling water: 2 tablespoons

First, boil or roast the potatoes, then mash them. You can use a grater or a potato masher for this. Cook the lamb meat by roasting or boiling it, then cut it into small pieces. Place the mashed potatoes and vegetables in a large bowl and mix them together, using a fork if needed. Shred or chop the lamb and add it to the mixture, along with the grated Parmesan cheese and chopped parsley. Season with salt and pepper, then mix all the ingredients together using your hands.
Take a portion of the meat croquette mixture with your hands and shape them. Divide the mixture into 12 equal rolls. Roll them in a bowl of flour until they are fully coated. Gently shake them to remove any excess flour.
Take a medium-sized bowl and crack the two eggs into it. Add a little salt and pepper to the eggs, then whisk them until well combined. In another dish, pour in the breadcrumbs.
