Mushrooms, Potatoes & Broccoli

  1. Fry the Potatoes:
    Heat oil in a skillet over medium heat. Add the diced potatoes, season with salt, and fry until golden and crisp. Remove and set aside.

  2. Sauté Onion & Beef:
    In the same skillet, add a little more oil if needed. Sauté the onion until just golden. Add the ground beef, broccoli florets, garlic powder, paprika, and black pepper. Cook, stirring, until the beef begins to brown.

  3. Add Mushrooms:
    Stir in the sliced mushrooms and cook until their liquid evaporates.

  4. Season & Combine:
    Sprinkle in the turmeric and a pinch of salt, then stir in the tomato paste. After the paste is fragrant and well incorporated, return the fried potatoes to the skillet. Mix gently to combine all ingredients.

  5. Finish & Serve:
    Remove from heat. Serve the beef, mushrooms, potatoes and broccoli hot, accompanied by fresh bread or rice.
