Turkish Iskender Kebab Recipe

Instructions for Preparing Iskender Kebab

Step 1

Place the veal fillet in a freezer bag and refrigerate for 2 hours to firm it slightly. After this time, remove the fillet from the refrigerator.

Step 2

Take the veal fillet out of the bag, place it on a cutting board, and slice it into very thin sheets with a sharp knife. Peel the onion, wash it, and grate it finely.

Step 3

Strain the grated onion and collect the juice in a suitable bowl. Add the veal slices to the bowl with onion juice, mix, and cover with plastic wrap.

Step 4

Marinate the veal slices in the refrigerator for 2 hours. After marinating, remove the fillet and place a suitable pan over low heat.

Step 5

Place the meat in the pan, cover it, and let it cook slowly without stirring until it releases water and the liquid evaporates. Then add olive oil and butter to the meat.

Step 6

Fry the fillet slices thoroughly, season with salt and black pepper, mix, and remove from heat. Begin preparing the Iskender Kebab sauce by washing the tomato.

Step 7

Peel the tomato completely and cut it into small pieces. Blend the pieces in a food processor until smooth.

Place a suitable saucepan over low heat, add olive oil and butter, and let the butter melt. Add the tomato puree, sauté, and pour in hot water.

Simmer the tomato sauce until it thickens. Once it reaches the desired consistency, season with salt and black pepper, mix, and remove from heat.

For the serving base, cut pita or Barbari bread into small cubes. Place a pan over low heat, add butter, let it melt, and add the bread cubes.

Toast the bread until golden. Remove the bread, add more butter to the pan, let it melt, wash the tomato, and cut it in half.

Add green chili peppers and tomato to the pan, fry them completely. Choose a serving dish, place the toasted bread cubes, and pour some tomato sauce over them.

Place the veal fillet slices on top of the sauce, drizzle with melted butter, and serve with the fried green chili peppers and tomato on the side. Optionally, serve with yogurt. Enjoy your meal!
